Depending on the fish and the recipe, there can be multiple ways to prepare your catch. All fish can be filleted by removing the meat from the body, then separating the skin from the meat. The fillet knife and mat in your Hook & Cook kit make the whole job easier — and a lot more enjoyable.
Five cuts between you and dinner. The knife and mat from your kit do the heavy lifting.
WHAT YOU NEED
Fillet knife (provided)
Fillet mat (provided)
Flat surface
Paper towels
Bowl for your fillets
Water to clean them
Fillet knife & mat (both in your kit), a flat surface, paper towels, a bowl, and water.

Cut behind the gills and pectoral fin down until you reach the backbone.
Turn the blade and cut through the ribs all the way to the tail, using the backbone as a guide.
Turn the fish over and repeat the same cuts on the other side.
After the fillet is cut free, remove the rib cage.
To remove the skin, place the fillet skin side down and insert the knife about a ½" from the tail. Hold the tail down firmly and run the knife blade between the skin and the meat.

Catfish
the southern staple
2 RECIPES
INGREDIENTS
Fish
1½ lb catfish fillets
Buttermilk Soak
½ cup buttermilk
1 egg
1 tbsp hot sauce (optional)
Cornmeal Coating
¾ cup yellow cornmeal
¼ cup all-purpose flour
1 tsp garlic powder
1 tsp onion powder
1 tsp smoked paprika
½ tsp dried thyme
¼ tsp cayenne pepper
1 tsp salt
½ tsp black pepper
To Serve
Cooking spray or olive oil spray
2 lemons, cut into wedges
¼ cup fresh parsley, chopped
STEPS
1
Soak the catfish — 30 minutes
Whisk together the buttermilk, egg, and hot sauce in a shallow bowl. Submerge the catfish fillets in the mixture, cover, and refrigerate for 30 minutes. This soak tenderizes the fish and draws out any strong flavor.
2
Mix the cornmeal coating
In a separate shallow dish, combine the cornmeal, flour, garlic powder, onion powder, smoked paprika, dried thyme, cayenne, salt, and black pepper. Stir well to evenly distribute the spices.
3
Preheat the air fryer
Preheat your air fryer to 400°F (205°C) for 5 minutes. This ensures an immediate sear on the coating when the fish goes in.
4
Coat the fillets
Remove the fillets from the buttermilk soak, letting the excess drip off. Press each fillet firmly into the cornmeal mixture on both sides, making sure the coating is even and sticks well.
5
Load the basket
Lightly coat the air fryer basket with cooking spray. Arrange the breaded fillets in a single layer — do not overlap. Spritz the tops of the fillets generously with cooking spray.
6
Air fry — 10–12 minutes
Air fry for 10–12 minutes, flipping halfway through. The fish is done when the crust is deep golden and the interior flakes easily with a fork (internal temp 145°F / 63°C). Work in batches if needed.
7
Serve
Transfer the fillets to a serving platter. Scatter fresh parsley over the top and serve with lemon wedges on the side.
hat guy says —
Don't skip the buttermilk soak — it removes any muddy taste from the catfish and helps the coating grip. Shake the basket halfway through cooking for even browning. Serve alongside coleslaw, hush puppies, or baked beans for a full Southern spread. Leftovers keep well in the fridge for up to 2 days; reheat in the air fryer at 375°F for 3 minutes to revive the crust.
INGREDIENTS
Fish
1½ lb catfish fillets
⅓ cup all-purpose flour
1 tsp salt
½ tsp black pepper
2 tbsp olive oil
Brown Butter Caper Sauce
6 tbsp unsalted butter
3 tbsp capers, drained
2 tbsp fresh lemon juice
2 tbsp fresh parsley, chopped
1 clove garlic, minced
STEPS
1
Dredge the fish
Pat catfish fillets dry, season both sides with salt and pepper, and dredge lightly in flour, shaking off excess — just a thin coat for a light crust, not a heavy breading.
2
Heat the pan
Heat olive oil in a large skillet over medium-high heat until shimmering.
3
Sear the catfish — 3–4 minutes per side
Lay fillets in the pan without crowding. Cook undisturbed until golden and releasing easily, then flip and cook the other side until it flakes easily with a fork.
4
Rest the fish
Transfer fillets to a plate and tent with foil.
5
Brown the butter
Wipe out the skillet, add butter over medium heat, and swirl often as it foams and then turns golden-brown and nutty-smelling, about 3–4 minutes — watch closely so it doesn't burn.
6
Finish the sauce
Stir in the capers and garlic, cook 30 seconds, then remove from heat and stir in lemon juice and parsley.
7
Serve
Spoon the brown butter caper sauce generously over the catfish.
hat guy says —
Brown butter goes from perfect to burnt in about 15 seconds — have your capers and lemon juice measured and ready before you start. A light flour dredge, rather than a full cornmeal breading, keeps this dish in pan-seared territory instead of fried. Great over rice or wilted spinach to catch the sauce.
Trout
delicate, done two ways
2 RECIPES
INGREDIENTS
Fish
4 trout fillets (6–8 oz each), skin-on
2 cedar grilling planks, soaked in water 1–2 hours
2 tbsp olive oil
1 tsp salt
½ tsp black pepper
Lemon-Dill Butter
½ cup unsalted butter, softened
2 tbsp fresh dill, chopped
1 tbsp lemon zest
2 tbsp fresh lemon juice
1 clove garlic, minced
¼ tsp salt
To Serve
Lemon wedges
Fresh dill sprigs
STEPS
1
Soak the planks — 1–2 hours
Submerge cedar planks fully in water and weigh down with a can. This prevents burning and creates steam that flavors the fish.
2
Make the lemon-dill butter
Combine softened butter, dill, lemon zest, lemon juice, garlic, and salt in a bowl. Mash together with a fork until well combined. Scrape onto plastic wrap, roll into a log, and refrigerate until firm.
3
Preheat the grill
Heat grill to medium-high (about 400°F). Place soaked planks directly on the grate and heat for 3–5 minutes until they start to crackle and smoke lightly.
4
Season the trout
Pat fillets dry, brush both sides with olive oil, and season with salt and pepper.
5
Grill on the plank
Flip planks smoking-side up and arrange fillets skin-side down on the planks. Close the lid.
6
Cook — 10–12 minutes
Grill covered until the fish flakes easily and reaches 145°F internal — no flipping needed, the plank does the work.
7
Serve
Transfer planks directly to a heatproof surface, top each fillet with a pat of the chilled lemon-dill butter so it melts over the fish, and garnish with dill sprigs and lemon wedges.
hat guy says —
If you don't have a grill, planking on a baking sheet in a 425°F oven for 12–15 minutes works too. Extra lemon-dill butter freezes well — slice off pats as needed. Keep a spray bottle of water nearby in case the plank edges flare up.
INGREDIENTS
Court Bouillon
4 cups water
1 cup dry white wine
1 small onion, sliced
1 carrot, sliced
2 celery stalks, sliced
2 bay leaves
4 sprigs fresh thyme
6 whole peppercorns
1 tbsp salt
1 lemon, sliced
Fish
4 trout fillets (6 oz each)
To Serve
2 tbsp fresh chives, chopped
Lemon wedges
Crusty bread or boiled potatoes
STEPS
1
Build the court bouillon
Combine water, white wine, onion, carrot, celery, bay leaves, thyme, peppercorns, salt, and lemon slices in a wide, deep skillet or pot.
2
Simmer the broth — 15 minutes
Bring to a simmer over medium heat, reduce heat to low, and let simmer uncovered for 15 minutes so the vegetables and aromatics infuse the liquid.
3
Strain (optional)
For a cleaner poaching liquid, strain out the solids and return the liquid to the pan, or simply nestle the fish among them for a more rustic version.
4
Lower the heat
Bring the bouillon to a bare simmer — small bubbles only, not a rolling boil, which would toughen the fish.
5
Poach the trout — 8–10 minutes
Slide the fillets into the liquid so they're mostly submerged. Poach gently until the fish turns opaque and flakes easily, 145°F internal.
6
Lift out carefully
Use a slotted spatula or fish spatula to lift each fillet out, letting excess liquid drain off.
7
Serve
Plate the trout, spoon a little of the warm poaching liquid over the top, scatter with fresh chives, and serve with lemon wedges and crusty bread or boiled potatoes.
hat guy says —
Keep the poaching liquid at a bare simmer — a rolling boil will break the fillets apart. The strained court bouillon can be saved and reused within a day or two, or reduced into a light sauce. This is one of the gentlest ways to cook a delicate fish like trout.
Walleye
best-eating fish in freshwater
2 RECIPES
INGREDIENTS
Fish
1½ lb walleye fillets
2 tbsp Dijon mustard
1 tbsp mayonnaise
Panko Crust
1 cup panko breadcrumbs
⅓ cup grated Parmesan
2 tbsp melted butter
1 tbsp fresh parsley, chopped
1 tsp lemon zest
½ tsp garlic powder
½ tsp salt
¼ tsp black pepper
To Serve
Lemon wedges
STEPS
1
Preheat the oven
Preheat oven to 425°F. Line a baking sheet with parchment or foil, and set a wire rack on top if available — this helps the crust crisp on all sides.
2
Make the mustard coat
Whisk together the Dijon and mayonnaise in a small bowl.
3
Make the panko topping
Combine panko, Parmesan, melted butter, parsley, lemon zest, garlic powder, salt, and pepper in a bowl. Toss until evenly coated and crumbly.
4
Coat the fillets
Pat walleye dry and arrange on the prepared rack or sheet. Spread a thin layer of the mustard mixture over the top of each fillet.
5
Press on the crust
Firmly press the panko mixture onto the mustard-coated side of each fillet so it adheres.
6
Bake — 12–15 minutes
Bake until the crust is deep golden and the fish flakes easily with a fork, internal temp 145°F. Tent with foil partway through if browning too fast.
7
Serve
Let rest 2 minutes, then serve with lemon wedges.
hat guy says —
The mustard layer is the glue — don't skip it even if you're not a mustard fan, you won't taste it. Walleye fillets vary in thickness; thinner ones may need only 10 minutes. Great with a simple green salad or roasted asparagus.
INGREDIENTS
Chowder Base
4 slices bacon, chopped
1 onion, diced
2 celery stalks, diced
2 cloves garlic, minced
3 tbsp all-purpose flour
4 cups fish or chicken stock
2 cups Yukon gold potatoes, diced
2 cups fresh or frozen corn kernels
1 cup heavy cream
1 tsp smoked paprika
1 tsp salt
½ tsp black pepper
1 bay leaf
Fish
1½ lb walleye fillets, cut into 1-inch chunks
To Serve
2 tbsp fresh chives, chopped
Oyster crackers or crusty bread
STEPS
1
Render the bacon
Cook chopped bacon in a large soup pot over medium heat until crisp, about 5–6 minutes. Remove bacon with a slotted spoon, leaving the fat in the pot.
2
Sauté the aromatics
Add onion and celery to the bacon fat and cook 5 minutes until softened. Stir in garlic and cook 30 seconds more.
3
Make the roux
Sprinkle flour over the vegetables and stir constantly for 1–2 minutes to cook off the raw flour taste.
4
Build the broth
Slowly whisk in the stock to avoid lumps, then add potatoes, smoked paprika, salt, pepper, and bay leaf.
5
Simmer — 12–15 minutes
Bring to a simmer and cook until the potatoes are just tender.
6
Add corn and cream
Stir in corn kernels and heavy cream, and return to a gentle simmer.
7
Poach the walleye — 5–6 minutes
Gently add the walleye chunks to the simmering chowder and cook until the fish is just opaque and flakes apart easily — don't stir too vigorously or it will break up too much.
8
Serve
Remove the bay leaf, ladle into bowls, top with the reserved crispy bacon and chives, and serve with oyster crackers.
hat guy says —
Add the fish last and keep the simmer gentle — boiling toughens it and shreds it apart. This chowder thickens as it sits; thin with a splash of stock or milk when reheating leftovers. Freezes fine without the cream — stir in cream after thawing and reheating.
Perch
pan-size perfection
2 RECIPES
INGREDIENTS
Fish & Spice Rub
1½ lb perch fillets
2 tbsp paprika
1 tbsp smoked paprika
1 tsp cayenne pepper
1 tsp garlic powder
1 tsp onion powder
1 tsp dried thyme
1 tsp dried oregano
1 tsp salt
½ tsp black pepper
3 tbsp unsalted butter, melted (for brushing)
Cajun Butter Sauce
4 tbsp unsalted butter
2 cloves garlic, minced
1 tbsp fresh lemon juice
1 tbsp fresh parsley, chopped
STEPS
1
Mix the spice blend
Combine paprika, smoked paprika, cayenne, garlic powder, onion powder, thyme, oregano, salt, and pepper in a small bowl.
2
Season the fish
Pat perch fillets very dry, brush both sides with melted butter, then coat generously with the spice blend, pressing to adhere.
3
Heat the skillet
Place a cast-iron skillet over high heat until just smoking, about 4–5 minutes. Good ventilation helps — this step produces real smoke.
4
Sear the fillets — 2–3 minutes per side
Lay fillets in the hot dry skillet and don't move them. Cook until a dark, blackened crust forms, flip once, and cook the other side until the fish flakes easily.
5
Rest the fish
Transfer to a plate and tent loosely with foil.
6
Make the pan sauce
Reduce heat to medium, add butter to the same skillet, and scrape up any browned bits. Stir in garlic and cook 30 seconds until fragrant, then remove from heat and stir in lemon juice and parsley.
7
Serve
Spoon the Cajun butter sauce over the blackened perch.
hat guy says —
This method produces real smoke — use an exhaust fan or cook outdoors on a side burner if possible. Perch fillets are thin, so watch closely to avoid overcooking. Pairs well with dirty rice or grilled corn.
INGREDIENTS
Per Packet (makes 4)
4 perch fillets (5–6 oz each)
2 small zucchini, sliced into half-moons
1 pint cherry tomatoes, halved
1 small red onion, thinly sliced
4 cloves garlic, thinly sliced
2 tbsp olive oil, plus more for drizzling
1 tbsp fresh oregano, chopped (or 1 tsp dried)
1 lemon, thinly sliced
1 tsp salt
½ tsp black pepper
4 tbsp dry white wine (optional)
To Serve
Fresh basil, torn
Crusty bread
STEPS
1
Preheat the grill or oven
Heat grill to medium-high (about 400°F) or oven to 400°F.
2
Cut the foil
Tear off four 12x18-inch sheets of heavy-duty foil and lay flat.
3
Layer the vegetables
Divide zucchini, tomatoes, red onion, and garlic evenly among the foil sheets. Drizzle with olive oil and season with a pinch of salt and pepper.
4
Add the fish
Place a perch fillet on top of the vegetables in each packet, season with remaining salt, pepper, and oregano, and top with a few lemon slices and a splash of white wine if using.
5
Seal the packets
Fold the foil up and over, crimping the edges tightly to seal in the steam — leave a little room inside for air to circulate.
6
Cook — 15–18 minutes
Place packets on the grill grates or a baking sheet in the oven and cook until the fish is opaque and flakes easily and the vegetables are tender.
7
Rest and open carefully
Let packets rest 2 minutes off the heat, then open away from your face — hot steam will escape.
8
Serve
Slide the contents of each packet onto a plate, scatter with fresh basil, and serve with crusty bread to soak up the juices.
hat guy says —
Double-layer the foil if grilling directly over higher heat to prevent tearing. Swap in whatever quick-cooking summer vegetables you have — bell peppers and asparagus both work well. These packets can be assembled a few hours ahead and refrigerated until ready to cook.
Crappie
papermouth, big flavor
1 RECIPE
INGREDIENTS
Fish & Cure
1 lb very fresh, sushi-grade crappie fillets, diced small
1 cup fresh lime juice (about 8–10 limes)
¼ cup fresh orange juice
Mix-Ins
1 avocado, diced
1 ripe mango, diced
½ red onion, finely diced
1 jalapeño, seeded and minced
⅓ cup fresh cilantro, chopped
1 tsp salt
Pinch of sugar
To Serve
Tortilla chips or tostadas
Extra lime wedges
STEPS
1
Source the fish carefully
Use only the freshest possible crappie from a trusted source, ideally previously frozen to eliminate parasite risk (ask your fishmonger, or freeze at 0°F for at least 7 days beforehand). Keep everything well chilled throughout.
2
Dice the fish
Cut crappie into small, even ¼-inch cubes and place in a non-reactive glass or ceramic bowl.
3
Cure in citrus
Pour the lime and orange juice over the fish, making sure it's fully submerged. Cover and refrigerate.
4
Cure time — 20–30 minutes
The acid "cooks" the fish — it's ready when the flesh turns opaque and firm throughout, not translucent. Don't over-cure or it turns rubbery.
5
Drain most of the liquid
Pour off about half the citrus juice, keeping the fish moist but not swimming.
6
Fold in the mix-ins
Gently stir in avocado, mango, red onion, jalapeño, cilantro, salt, and a pinch of sugar to balance the acidity. Fold gently to keep the avocado and mango from turning to mush.
7
Chill briefly
Let sit in the fridge 10 minutes so flavors meld before serving.
8
Serve
Spoon into small bowls or onto tostadas, and serve with tortilla chips and extra lime wedges.
hat guy says —
Food safety matters here — use only fish that's been previously frozen (this kills parasites) and keep it cold at every step. Serve within a few hours of preparing; the acid keeps breaking down the fish and it turns mushy after a day. Adjust jalapeño to taste for more or less heat.
