Recently at Mystery Tackle Box, we've been on a bit of a keeper craze. We've already shown you how to make the perfect perch tacos, and now, a friend of the program slayed some walleye on Lake Erie and wanted to enjoy those tasty, toothy critters. Provided by Blond Ambition Kitchen, we have the perfect fried walleye recipe complete with sides, apps, and sauce!
Heat a sauce pan over medium with some olive oil, enough to coat the bottom. Add the shallot and green onion bottom, season with salt and pepper. Cook, stirring frequently, until softened and fragrant. Add in the Beer and bring it to a boil for a coupled minutes. Lower the heat to low medium and slowly incorporate the cream cheese. Once the cream cheese is totally melted add in both cheddars slowly, until combined. Season the sauce with salt and pepper and transfer to a serving dish. Sprinkle the green onion tops over it and serve with cubed crusty bread for dipping.
Place the flour and Old Bay into a large bowl and whisk to combine. Add the beer and 1/4 cup water and whisk to make a smooth batter. Put an inch of oil into a frying pan and heat over medium high heat until temperature registers 350 F on a deep fry thermometer. Working in small batches, dust the fish with cornstarch lightly, dip the fish into the batter, shaking off the excess, and fry. Turn the fish occasionally until cooked through and golden brown. Each piece should be done in about 5 minutes. Place the fish on a wire rack or on a heavily paper toweled plate.
